Turkish simit…

Have you ever went to turkey…specifically to ISTIKLAL street..passed thru the biggest breakfast and coffee shop there named SIMIT SARAY.ss cepe.they make the best ever fresh warm simit..i went there couple of years ago and it came to my mind these days that i wanna try to recreate there recipes..so i came up with this recipe and it was fabulous..the closest one to the real deal..and won’t believe how easy it is to make..

INGREDIENTS:

  • 3 CUPS FLOUR
  • 3 tablespoons vegetable oil
  • 2 tsp salt
  • 2 1/4 tsp dry yeast
  • 1 tsp sugar
  • 1 cup Luke warm water
  • molasses mixture: 2 tbsp water+3 tbsp molasses
  • white sesame seeds

METHOD:

  1. combine all the dry ingredients together then start adding the water and kneading the dough until it comes together..you might need lessor more water depending on the flour and the weather too so add little by little until it forms a ball that does not stick but moist too..DSC_0020
  2. knead for about 10 minutes to develop the gluten in the breadDSC_0023DSC_0026
  3. cover and let it rise for 2 hours until doubled in sizeDSC_0028
  4. take the dough into your working surface roll out and divide into about six peicesDSC_0029DSC_0030
  5. take each piece and roll out into a thin long threadDSC_0031

  8. tuck both ends together into a ringDSC_0034DSC_0035
  9. now dip each one in the molasses water mixture on both sidesDSC_0036DSC_0037DSC_0039
  10. then put into the sesame seedsDSC_0040
  11. lay them all on a baking sheet and let them rise again for about an hour
  12. preheat the oven on 450 degree F or 225 Degree Celsius.. and bake for about 15 to 20 mins until golden brown..
  13. i have to admit i couldn’t resist the urge to tear up one and have a bite and it was well worth burning the mouth..DELICIOUSSSDSC_0003

Rosemary focaccia

Rosemary focaccia is probably the easiest kind of bread that you can make,,it’s basically pizza dough that is topped with olive oil ,olives,rosemary and garlic..super delicious and here is how to make it

INGREDIENTS:

  • 3 1/2 cups flour
  • 2 1/4 tsp dry yeast
  • 1 cup lukewarm water
  • 1 tablespoon sugar
  • 2 tsp salt
  • 1/2 cup olive oil
  • olives
  • garlic whole cloves
  • rosemary

METHOD:

-add the yeast to the 3/4 cups of water with sugar and let it foam 5 minsimage

-add the flour with 1/4 cup of olive oil and kneadimage-dissolve the salt in the last 1/4 cup of waterimageimage

-after kneading until smooth put in an oiled bowl,cover and let rise for 2 hours in a warm placeimage

-after rising punch downimage

-prepare the baking pan by sprinkling some corn flour an drizzles of olive oilimage

-spread the dough on the counterimage

-transfer to the baking sheet and poke with you finger as much as you canimage

-drizzle 1/4 cup of olive oil over the dough to fill the dips..then add olives.rosemary.garlic and a sprinkle of salt..at this stage you can add some grated cheese as well..image

-let it rest for 30 mins then bake in a 420 degree F OVEN for about 30-40 mins until cooked and golden brownimageENJOYY THE BEST AND THE SIMPLEST BREAD EVER,ADD NEXT TO YOU DINNER TABLE OR DIP IN YOU FAVORITE SOUP OR EAT JUST LIKE THAT,DELICIOUS..

Raisin bread

The special thing about this sweet raisin bread is that its a no yeast and no knead bread wish has a consictency very close to brioche and is sweet so its perfect for butter and jam,peanut butter and jam,or nutella tartines..

here is how to make it

INGREDIENTS:

  • 4 Cups flour plus extra 1/2 cup for shaping the dough
  • 1 tsp baking powder
  • 4 tablespoons sugar
  • 1 tablespoon orange zest
  • 1 egg
  • 1/4 cup butter cold diced into cubes
  • pinch salt
  • 1 cup raisins
  • 1 3/4 cups buttermilk(or milk with 1 tsp vinegar)

METHOD;

Prepare the ingredients..put the flour into the mixer..add in another container the buttermilk,salt,sugar,egg,baking powder..add 1 tablespoon of flour to the raisins

Add the cold butter to the flour

mix until resemble sand

add the butttermilk mixture while the mixer is on or if u r using a food processor same idea

add the raisins and mix again

flour the surface very well because it’s a very sticky dough

dump the dough onto the surface

cover with more flour and flour ur hands as well

try to need it until it form a ball

transfer onto a baking sheet lined with parchment or silicon mat and cut the surface so it cooks evenly on the inside AND PUT IN A PREHEATED 375 DEGREE OVEN for about an hour

i was baking this bread in the middle of the night on sunday after the weekend hoping to make a lovely breakfast to start up the week..and i kept starring at the oven watching it rise slowly and slowly,got me so exited like nothing else,the most romantic happy feeling of being accomplished and so proud..baking bread is just the best feeling ever..

kaiser bread

Hello my freinds,yesterday was father’s day and i wanted to prepare a dinner for my husband after he come back from his trip NYC..i wanted to surprise him because he is a father to be:)) and i m pretty sure that he has no idea and this is going to be a totally new experience so i figured that i d make one of his favorite man food,BURGERS:) Yes but i wanted to make it extra special by baking the bread myself..so this is how i made it:

  • 2 EGGS
  • 4 TSPS DRY YEAST
  • 2 TABLSPOONS SUGAR
  • 3/4 CUP MILK( or 3/4 cups water with 1/4 cup of dry milk powder)
  • 2 TBSP ,MELTED BUTTER

MIX ALL OF THESE INGREDIENT TOGETHER

  • 2 1/2 CUPS FLOUR( i used regular flour because that’s what i had at the moment but the best would be bread flour of course)
  • 2 TSP SALT

AFTER MIXING THE WET INGREDIENTS ADD THE FLOUR AND SALT AND KNEAD FOR 10-15 MINS UNTIL IT BECOME SOFT BUT STILL WILL BE STICKY(don’t add more flour)..just put it in an oiled ball so it doesn’t stick and let it rise in a warm place u until well risen (a trick fo faster this is to put the bowl on the stove top and turn the oven on at low temperature..this will make it rise quickly in an hour

after that dump your dough into a working surface and divide it into 10 or less if you like bigger buns..then roll it and leave it to rise again for an hour or more with the same technique..

now your are one step ahead of making beautiful kaiser bread.just brush it with eggs and sprinkle sesame seed or poppy seed on top for beautiful texture and taste

bake in 425 degree F oven for about 15 mins or u until golden brown..

Nothing is better to me than turning on the music and baking with a calm mind and busy hands,smelling the lovely dough and thinking about the moment you ll share it with you loved ones.Million Dollar Moment:))
